Pan Fried Chicken Curry Dish
This dish is one of the easiest and easiest dishes to make whether it’s for the family or guests coming over. I learned how to make this from my sister Marina who has been making it for years. Her dish calls for these ingredients to be layered like cake, but the taste is just the same - just different presentation.
Ingredients:
1 can mixed vegetables (you can use the frozen ones for a healthier alternative - or chop all the veggies yourself)
4-6oz. shredded chicken
1 cup white rice (brown rice for healthier alt.)
curry powder (key ingredient)
salt
pepper
paprika (optional)
Directions:
Cook the rice separately
Boil the chicken separately (you can also use rotisserie) and shred them apart. Tip: use the chicken broth for the rice.
Cook the veggies in a little bit olive oil then add your salt, pepper, paprika to your taste; but go extra on the curry.
Once the veggies are almost cooked through, add your chicken and rice and just mix together to coat everything with the seasoning
Voila! That easy.
For a presentable dish, layer half the rice, layer the veggie mix, layer the second half of rice. Spread some Mayo on top and stick it in the oven for about 20 minutes or so. Let cool. Enjoy!
