Red Pepper & Avocado Hummus Recipe

Both delicious, both easy to do and both nicely served together for appetizing or a grazing table. Make it super pretty by filling it up in the shell of the avocado and a fresh red pepper cut in half. It also looks beautiful in a red and green cabbage cut in half. Serve it with chips and/or veggies, depending on how healthy you want the setup to be. Here I have it in plain white bowls because, well...its just a Thursday! Lol. My peppers and avocados were going bad, so this was the perfect dish to savor the foods & you can store it in your fridge for several days! Buy mini tupperware and take them to work with you for snacks. It's a perfect snack for toddlers too (except my toddler is weird about texture, ugh!). Roasted Red Pepper Hummus

1 can garbanzo beans
2 large sweet red bell peppers
2 large garlic cloves
2 large spoons of tahini
2 lemons
3 tbsp of extra virgin olive oil
1/2 tsp salt
*roast the bell peppers for 15-20 minutes on 425f.
*roast the garlic cloves unpeeled for about 10 minutes then take the peel off and blend with the rest of the ingredients

Avocado Cilantro Hummus

1 can garbanzo beans
1 avocado
1 1/2 limes, juiced
1 clove of garlic
1/2 cup cilantro
1/4-1/2 water (add enough to make it creamy; not too thick or too watery)
2 tsp of extra virgin olive oil
1 tsp cumin
1 tsp chilli powder
1 tsp hot sauce (any kind)
1/4 tsp salt 
​*taste to your flavoring
